Since black tea is fermented, many of its natural polyphenols are converted into soluble tannins during the process. These tannins are responsible for the distinctive colour and fuller body of black tea. The fermentation/oxidization of black tea also results in more soluble caffeine than white, green or oolong teas, but black tea still only contains approximately one quarter of the caffeine found in brewed coffee. Caffeine is a natural stimulant that revives both mind and body.
